Is the Mayan culture accurately depicted in Mel Gibson's new movie Apocalypto?

Has Mel conflated Aztec and Mayan ritual features (i.e. ripping hearts from a living human sacrifice?) in the interests of drama? I know the plot of Apocalypto is fictionalized, but I'd like to know whether the milieu, at least, is based on reality.
